I made this for our small group potluck BBQ.  Rice Krispy Treats sounded yummy to me, but I was surprised to learn that Rice Krispies contain gluten as a part of their manufacturing process.  Since many of my friends in the small group don’t do gluten (and I am trying not to as well), I thought making a gluten free option might work.  This is very sweet and a little goes a long way.  We all liked them.

This recipe makes one pan.  I doubled this to accomodate our group.

1/4c. butter
8c. Nature’s Path Maple Sunrise Gluten Free Cereal
1 10oz. bag marshmallows

In a large saucepan, melt butter.  Add marshmallows and stir until melted.  Remove from heat and add cereal.  Mix until evenly coated.

Spread into a oil sprayed 13×9 pan.  Cool and cut into squares.

Hanging Out in Auburn

We took the back roads out to Auburn, enjoyed a yummy lunch at the Auburn Ale House (I love their Shanghai Lettuce Wraps…), then walked the town.  Here’s some random shots from that day…

 

Friends Baptism

The boys have a close friend who was baptized with his sister a couple of weeks ago.  We were able to watch this special event.

Reb and Beverly Bradley of Family Ministries hosted a delightful date night at their home.  Couples enjoyed a picnic dinner at sunset, then the Bradleys spoke a little on marriage.  After that, it was a movie under the stars and s’mores!

White to Orange Belt

The boys graduated from white belt to orange belt!  They had a ceremony and the boys had to show off their “mad skills”…

Eric Graduates!

Our good friend Eric invited us to attend his graduation from William Jessup University, an incredible Christian college near us.  It was a special day to share, and ‘A’ asked if he could wear a tux when he graduates!

This is Bryce Jessup, the President Emeritus (he was the President for 25 years; his father founded the University).  We had the privilege of meeting him and his lovely wife at Eric’s graduation party.

Eric, with the current President, Dr. John Jackson. Up until a few months ago, Dr. Jackson was one of the pastors at our church.  They picked a perfect person to fill the spot.

Next stop for Eric…seminary!

This Little Piggy

I just completed a lesson on finances with the boys.  One of the things they learned was to allot a certain amount for spending, short term saving , tithing, and long term saving (for a car).

I just found these cute piggy banks that have four separate compartments to help them divide their allowance appropriately…  here’s the link in case you are interested:

The Organized Pantry

I am so excited to share this with you!  I have been disappointed in my organizing efforts for my pantry, a surprisingly small closet for such a big kitchen.  I have tried to keep it organized, but nothing seemed to work (especially with everyone grabbing and returning items randomly).

I decided to containerize most the items in the pantry.  Here’s the end result.  David thinks it looks like we’re moving, but understands the reasoning behind it.  My long term goal is to replace the cardboard boxes with plastic ones.

Now, when I need something, if I don’t immediately see the item, I pull the box out and find it.  SO SIMPLE!

Boxes: Nuts, Lentils, Misc. Grains/ Baking(2)/ Vinegars, Cooking Wine/ Pasta, Rice/ Snacks/ Soup/ Beans

Salsa

Mix it all together.  I ate as is, but it would be good in a wrap or on a rice cake or crackers…
