Time to say goodbye to our good friends, Tim and his boys, as they head back up to Washington state.  Until next year, friends! (If not sooner… :))

DH takes the boys to this indoor trampoline park called Sky Zone and they always come home sweaty and tired.  It made for a wonderful birthday party.

Codfish Falls Trail

It’s Spring break for the Carson clan and that means a trek south to our house!  I took the boys on a hike with my friend/next door neighbor.

This is an excellent and easy hike for all ages.  The only issues was the 3 mile crazy dirt road getting there.  Some MAJOR potholes, but my van did well.  Still, I would need to really consider if I wanted to subject it to that kind of stress again.

If you look closely at the top of the rocks, you will see a white shirt and a red shirt.  This is ‘JC’ and ‘R’.  All four of the big boys took it upon themselves to scout out a side-trail and climb to the top of the falls!

Wild figs…we saw a ton of butterflies, two large garter snakes, a few lizards.

All four boys ended up jumping into the river from a 10 foot rock.  This is ‘R’ jumping.  He loves this activity.  No fear.  Always wanting to go higher.  No hesitation.  Pray for us.

Run Rocklin 2013

Proud to have ran this 5K with my boys!  They both ran the whole thing with a good attitude.  ‘A’ is made to run.  We held him back.  We wants to go…go…go…

Happy Easter!

Plans went awry when I ended up dealing with a bad case of vertigo!

I awoke about 2am.  There was an amazing electrical storm outside.  I decided to go on bunny patrol and decorate the dining room table (we do this in lieu of baskets…) Upon completion, I laid back down and immediately vertigo set in.

I was sick for about an hour.  I was able to get back to sleep.  Then next morning, I was still not feeling great and had another minor episode later in the week.

My friend Michelle’s daughter was driving up from Lake Havasu and spent the night with us.  The Easter bunny left a little stash for her road trip home…(and her dog as well 🙂

Raid the Fridge Curry

I needed to use some veggies in the fridge before they went bad.  A soup, stir fry, or curry dish is always a good idea.  Tonight, I made a yummy curry that I served over white rice.

Heal olive oil in skillet.  Add diced tofu with salt and pepper and cook until there is a golden skin.  At the same time, microwave sweet potatoes.

To the tofu, add…garbanzo beans, mushrooms, zucchini, red chard, and the cooked sweet potatoes.  Mix together and cook, then add jarred yellow curry sauce and simmer until everything is cooked through.

Chelan Loves us

Today, not only did he bring us a mole, but he also brought home a beautiful hanging bird’s nest.  I can only imagine what he must have looked like as he was lugging this home.  I opened it up to see the interior and there were no eggs.  I hope it was an empty nest, but with him, you never know…

This recipe by Joanne Chang is definitely a keeper!  I held back on the jalapeno and siracha, but added them since it was so mild.  Full of flavor!!  I added extra water to make a little more of a sauce than a paste, and used agave nectar instead of sugar.
