{"id":446035,"date":"2007-12-17T09:13:00","date_gmt":"2007-12-17T17:13:00","guid":{"rendered":"http:\/\/www.centerdeep2.com\/riverbendprep\/2007\/12\/17\/menu-plan-monday-december-17-december-23\/"},"modified":"2007-12-17T09:13:00","modified_gmt":"2007-12-17T17:13:00","slug":"menu-plan-monday-december-17-december-23","status":"publish","type":"post","link":"https:\/\/www.centerdeep2.com\/riverbendprep\/2007\/12\/17\/menu-plan-monday-december-17-december-23\/","title":{"rendered":"Menu Plan Monday December 17-December 23"},"content":{"rendered":"<p align=\"left\"><strong>Mon:<\/strong> Ant-ee Sara and James over for dinner.&nbsp; Take meal to Potoshnik family&#8230;<br \/>\n(<strong>bold <\/strong>items include recipes below)<br \/>\nChips and salsa\/Taco Bar\/<strong>Cilantro Corn Salad<br \/>\n<\/strong><strong>Tue: <\/strong>Family holiday retreat at the Westin Bellevue<br \/>\n<strong>Wed:<\/strong> Family holiday retreat at the Westin Bellevue<br \/>\n<strong>Thur: <\/strong>Family holiday retreat at the Westin Bellevue\/&#8217;A&#8217;s birthday.&nbsp; Special dinner out<br \/>\n<strong>Fri:<\/strong>&nbsp; <strong>Skillet Yellow Rice and Chicken<\/strong>\/ Tomato Soup<br \/>\n<strong>Sat:<\/strong> Christmas at Dad&#8217;s house\/ Bring <strong>Broccoli Salad<br \/>\nSun: Crockpot Vegetables with Pasta,<\/strong> fruit salad<\/p>\n<p><strong>Cilantro Corn Salad<\/strong> (we eyeball the amount for the ingredients)<br \/>\nFrozen corn<br \/>\nOnion<br \/>\nTomato<br \/>\nCilantro<br \/>\nVegetable oil<br \/>\nRed wine vinegar<br \/>\nSalt<\/p>\n<p><strong>Skillet Yellow Rice and Chicken<br \/>\n<\/strong>1T. olive oil<br \/>\n2 garlic cloves, minced<br \/>\n1\/2c. chop bell pepper<br \/>\n1lb. blsl chicken thighs, cut one inch<br \/>\n1c. white rice<br \/>\n1t. ground tumeric<br \/>\n1t. ground cumin<br \/>\n2c. chicken broth<br \/>\n1T. capers, drained<br \/>\n10 pimento stuffed olives, halved crosswise<br \/>\n1\/2t. salt<br \/>\n1\/2t. pepper<br \/>\n1\/4c. chop fresh parsley<\/p>\n<p>Heat oil in non stick skillet over med high heat.&nbsp; Add garlic, onion, and bell pepper; cook 2 minutes.&nbsp; Add the chicken and cool 2 minutes longer.&nbsp; Stir in rice, tumeric, and cumin; cook 1 minute.&nbsp; Add broth, olives, capers, salt, and black pepper; bring to a boil.&nbsp; Cover, reduce heat, and simmer until broth has disappeared, about 17 minutes.&nbsp; Remove form hear and stir in parsley.<\/p>\n<p><strong>Broccoli Salad<br \/>\n<\/strong>1 head fresh broccoli, cut into bite size pieces <br \/>\n1\/2 cup raisins <br \/>\n1\/4 cup red onion, chopped <br \/>\n2 tablespoons white sugar <br \/>\n3 tablespoons white wine vinegar <br \/>\n1 cup mayonnaise <br \/>\n1 cup sunflower seeds <br \/>\n10 slices bacon <\/p>\n<div id=\"floatbox\">\n<div id=\"floatboxpadding\">\n<div id=\"recipeactionbox\">\n<div class=\"raised\">\n<div class=\"boxcontent\"><!-- REVIEWS AND STARS --><\/p>\n<div id=\"recipeactionboxheader\">\n<p><span>Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Crumble and set aside. <br \/>\n<\/span><span>In a salad bowl, toss together broccoli, raisins and red onions. In a separate bowl, whisk together the white sugar, vinegar and mayonnaise. Pour over broccoli mixture and toss to coat. Refrigerate for at least 2 hours. <br \/>\n<\/span><span>Before serving, sprinkle with sunflower seeds and crumbled bacon. Toss and serve. <\/p>\n<p><strong>Crockpot Vegetables with Pasta<br \/>\n<\/strong>2c. chop zucchini<br \/>\n1\/2c. cherry tomatoes, cut in half<br \/>\nhalf green pepper, sliced<br \/>\nhalf med. onion, sliced<br \/>\n1\/2c. fresh mushrooms, sliced<br \/>\n4 cloves garlic, minced<br \/>\n1T. olive oil<br \/>\n1T.
