{"id":762897,"date":"2010-02-02T10:12:00","date_gmt":"2010-02-02T18:12:00","guid":{"rendered":"http:\/\/www.centerdeep2.com\/riverbendprep\/2010\/02\/02\/menu-plan-monday-for-elyse-and-stacy\/"},"modified":"2010-02-02T10:12:00","modified_gmt":"2010-02-02T18:12:00","slug":"menu-plan-monday-for-elyse-and-stacy","status":"publish","type":"post","link":"https:\/\/www.centerdeep2.com\/riverbendprep\/2010\/02\/02\/menu-plan-monday-for-elyse-and-stacy\/","title":{"rendered":"Menu Plan Monday: For Elyse and Stacy :)"},"content":{"rendered":"<p><strong>Monday:<\/strong>&nbsp; Eat Out<\/p>\n<p><strong>Tuesday:&nbsp; <\/strong>(Freezer Meal) Chicken Noodle Soup, Bread, Fruit<\/p>\n<p><strong>Wednesday:<\/strong> Crockpot Chicken Fajitas, Green Salad (Recipe Below)<\/p>\n<p><strong>Thursday:<\/strong>&nbsp; Dinner with Friends<\/p>\n<p><strong>Friday:&nbsp; <\/strong>Crockpot Meatloaf (Recipe Below), Green Beans, Mashed Potatoes<\/p>\n<p><strong>Saturday:&nbsp; <\/strong>Crockpot White Bean Chicken Chili (Recipe Below), Cornbread, Green Salad<\/p>\n<p><strong>Sunday:<\/strong> Leftovers<\/p>\n<p>\n<strong>Crockpot Chicken Fajitas<br \/>\n<\/strong>1.5 lbs. chicken cut into 1 inch strips<br \/>\none green pepper, choped<br \/>\none yellow pepper, chopped<br \/>\none red pepper, chopped<br \/>\none small onion, chopped<br \/>\n1 4oz. can of green chilis<br \/>\n1T. lemon juice<br \/>\n1\/4t. vegetable oil<br \/>\n2t. chili powder<br \/>\n1t. cumin<br \/>\nsalt to taste<br \/>\npepper to taste<br \/>\ngarlic powder to taste<br \/>\n1\/2 can\/bottle beer (I use Corona)<br \/>\nPlace first six ingredients in crockpot.&nbsp; Mix remaining items in a bowl and pour over items in crockpot.&nbsp; Cook on low 4-5 hours.&nbsp; Serve on warm tortillas with sour cream, guacamole, and cheese.<\/p>\n<p><strong>Crockpot Meatloaf<br \/>\n<\/strong>1.5 lb ground beef ( or do a ground turkey\/ground beef mix)<br \/>\n1 med. onion, chopped<br \/>\n2 eggs<br \/>\n2\/3c. dry quick oats<br \/>\n1 envelope dry onion soup mix<br \/>\n1t. dry mustard<br \/>\n1c. ketchup, divided<\/p>\n<p>1. mix meat and onion thoroughly.<br \/>\n2.&nbsp; combine remaining ingredients, except for 2T. ketchup<br \/>\n3. Spray crockpot with cooking spray.<br \/>\n4. Shape into loaf and place in crockpot.&nbsp; Top with remaining ketchup.<br \/>\n5. cover and cook on low 8-10 hours or on high 4-6 hours.<\/p>\n<p>Serves 8\n<\/p>\n<p><strong>White Chicken Chili<br \/>\n<\/strong>Makes 6 servings<\/p>\n<p>1T. olive oil<br \/>\n3\/4lb. uncooked boneless, skinless chicken breast, cubed<br \/>\n1 large onion, chopped<br \/>\n2 garlic cloves, minced<br \/>\n1 large onion, chopped<br \/>\n1c. fat free chicken broth<br \/>\n2 15.5oz. cans navy beans, rinsed and drained<br \/>\n1t. dry mustard<br \/>\n1t. ground cumin<br \/>\n1\/2t. salt<br \/>\n1\/4t. black pepper<\/p>\n<p>1.
