{"id":783436,"date":"2011-01-08T19:16:24","date_gmt":"2011-01-09T03:16:24","guid":{"rendered":"http:\/\/homeschoolblogger.com\/leigharev2\/?p=783436"},"modified":"2011-01-08T19:16:24","modified_gmt":"2011-01-09T03:16:24","slug":"flowered-chicken-saute","status":"publish","type":"post","link":"https:\/\/www.centerdeep2.com\/riverbendprep\/2011\/01\/08\/flowered-chicken-saute\/","title":{"rendered":"Flowered Chicken Saute"},"content":{"rendered":"<p>We just had this for dinner. \u00a0It is so good, I have to share the recipe. \u00a0I got it from the <a href=\"http:\/\/www.cleaneatingmag.com\/\">Clean Eating Magazine<\/a>. \u00a0It was fast and delicious. \u00a0I modified it a bit to make it a little more efficient for me.<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>1lb. butternut squash<br \/>\n2 turnips, peeled and cut into 1 inch cubes<br \/>\nolive oil (recipe calls for 1t. \u00a0I use a little more)<br \/>\n2 whole boneless, skinless chicken breasts, cut into bite size pieces (recipe called for 1lb.)<br \/>\n1 bunch broccolini, coarsely chopped (the recipe called for rapini)<br \/>\n5oz. unsweetened dried cherries (recipe called for 4oz.)<br \/>\n1tsp. dried sage (I suspect I had a little heavy hand with the sage)<\/p>\n<p><strong>Instructions <\/strong><\/p>\n<ol>\n<li>Prepare squash: Cut off ends, and cut in quarters. \u00a0Using a knife, remove the hard skin. \u00a0Scoop out seeds (I just cut around them), and cut into 1 inch cubes. \u00a0(There will be plenty squash that won&#8217;t be used , but heat it up anyway and freeze what you don&#8217;t use.)<\/li>\n<li>Fill a medium pot half with water and boil over high heat. \u00a0Add squash to pot, and boil about 6 minutes, until a knife can slice through a piece of squash, but it&#8217;s not mushy. \u00a0Using a strainer, remove squash from water and set aside.<\/li>\n<li>Using the same bling water, place the turnips in it and boils for about 3 minutes. \u00a0Drain and set aside.<\/li>\n<li>Heat oil in a large nonstick pan over medium heat, then add chicken.
