{"id":787442,"date":"2013-03-22T13:57:57","date_gmt":"2013-03-22T13:57:57","guid":{"rendered":"http:\/\/www.centerdeep2.com\/riverbendprep\/?p=787442"},"modified":"2013-03-30T00:40:28","modified_gmt":"2013-03-30T00:40:28","slug":"minty-lemon-pesto-pasta","status":"publish","type":"post","link":"https:\/\/www.centerdeep2.com\/riverbendprep\/2013\/03\/22\/minty-lemon-pesto-pasta\/","title":{"rendered":"Minty Lemon Pesto Pasta"},"content":{"rendered":"<p>I love to go through magazines and tear out recipes, then adapt them to suit our family&#8217;s preferences or us what we have on hand. \u00a0This recipe is just that. \u00a0It &#8220;made the cut&#8221; and is something we want to have again.<\/p>\n<p>The original recipe had grated cheese, tuna, zucchini, and white beans. \u00a0I omitted the cheese and tuna, subbed broccoli for the zucchini, and used pinto and kidney beans instead. \u00a0I also changed up some of the prep process to save steps. \u00a0Lastly, I added some optional toppings.<\/p>\n<p>We all love the result and will definitely make again. \u00a0Fresh and perfect for Spring&#8230;<\/p>\n<p>1\/2lb. whole wheat pasta (I used penne)<\/p>\n<p>3c. packed baby spinach<\/p>\n<p>1\/2c. packed fresh mint<\/p>\n<p>1 clove garlic, minced<\/p>\n<p>Zest and Juice of 1 Lemon<\/p>\n<p>1T. olive oil<\/p>\n<p>1\/3. c. toasted sliced almonds<\/p>\n<p>1 red bell pepper, chopped<\/p>\n<p>1 cup broccoli, chopped<\/p>\n<p>1 can pinto beans, rinsed<\/p>\n<p>1 can kidney beans, rinsed<\/p>\n<p>salt and pepper<\/p>\n<p>Optional Toppings: Chai seeds, Hemp Seeds, Flaxseed, Nutritional Yeast<\/p>\n<p>1. Cook pasta according to package. \u00a0For the last five minutes of boiling, place the broccoli in with the pasta. \u00a0Drain together. \u00a0Set aside.<\/p>\n<p>2. Put the spinach, mint, garlic, lemon zest, lemon juice, and olive oil in the food processor (I use a Vitamix) and mix until a pesto forms.<\/p>\n<p>3. \u00a0Place the almonds and beans on the pasta. \u00a0Add the pesto and mix together. \u00a0Season with salt and pepper. \u00a0Sprinkle additional toppings (see above), if desired. Serve.<\/p>\n<p>with toppings.
